It is a real rarity to find 70-month old Parmigiano Reggiano wheels on the market. Normally, Parmigiano Reggiano producers prefer to focus their efforts on ages up to 36 months, which are easier to position on the market. The 12-month old cheese, for example, is ideal to be eaten as a soft cheese; while cuts of 24 and 36 months old are more suitable for grating over pasta and soups, or eaten as shavings, perhaps with a splash of balsamic vinegar (the real one!).
A 70-month maturing is without doubt highly esteemed, as it allows the Parmigiano Reggiano complete maturation releasing an intense aroma.
